An evening with Colin Shane
Chef Sean met Colin Shane at SingleThread back in 2018, where they dedicated many months and years of hard work. The two quickly became friends, bonding over their shared passion for cooking and music. Sean was actively involved in a band at the time, while Colin had previously pursued a music career. Their shared love for performing often led them to Sean’s garage, where they would play together late into the night.
Like the chefs at Troubadour, Colin has always prioritized the use of regional ingredients and sustainable practices for his cuisine. His innovative use of local produce, including an on-site garden he developed with his wife, Lauren, earned him two semi-finalist nominations for the James Beard Foundation Rising Star Chef award in 2017 and 2018. Colin was also named a Local Hero by Edible Santa Fe for his devotion to healthy and sustainable food systems in New Mexico.
Colin now resides in Nashville serving as the Chef de Cuisine for Patchwork Productions, where he collaborates with James-Beard Award winner Sean Brock. Brock’s acclaimed restaurants–June, Audrey, and Embers Only–offer diverse dining experiences. June features experimental tasting menus that explore Southern ingredients through innovative techniques developed in a state-of-the-art Research & Development Lab, while Audrey provides a more grounded yet refined experience, paying homage to Brock’s Appalachian heritage. Embers Only, a speakeasy-style cigar lounge, adds a touch of exclusivity to the lineup.
It was an evening of collaboration, where Appalachian cuisine met California-French flavors.
