An evening with Matt Vawter

Chef Sean met Matt Vawter when they were just two young guns new to the culinary industry in 2006. Fast forward to 2014 and here we are meeting Matt again, a chef & partner at Mercantile in Denver. He gave us platforms to stand on and reminded us of the importance of taking care of our fellow chefs, while insisting that the best things require time & attention. Now he resides in Breckenridge, Colorado at the helm of his two restaurants: Rootstalk and Radicato.

As a chef in a state known for its stone fruit, cheese, livestock and game, Vawter’s culinary ethos of intentional sourcing shines in his cuisine. Vawter has maintained a commitment to local purveyors, utilizing the best ingredients available and nurturing relationships with Colorado’s farmers, ranchers, and artisans: A relationship with food we know very well.

I was an evening of collaboration showcasing food sourced intentionally and exploring European cuisine.
